It gets warm in Los Cabos during the summer and one starts looking for a way to cool down? Remember when you were a kid and you would cool down with a delicious popsicle? Well, popsicles are no longer just for kids. Think about an offering to your friends next time you entertain. Here are some suggestions and directions. These recipes are so easy and a great way to impress your friends after a BBQ. Just blend all the ingredients and pour into cups or molds, let them freeze a bit before sticking in a stick, continue to freeze to desired consistency.
Mojito: Make simple syrup as described. Puree with 1/3 cup rum, 1/2 cup mint leaves, 1/3 cup lime juice and 1 cup water.
Grapefruit campari: Make simple syrup: cook 1/4 cup cougar and 1/4 cup water over medium-low heat until the sugar dissolves. Combine with 1 1/2 cups grapefruit juice
Fennel Pernod: Make simple syrup as described. Puree with 2 cups roughly chopped fennel and 1/2 cup Pernod or other anise liqueur.
