&lt;/span&gt;However, it can also create a bad situation when news is reported with no factual base or exaggerated in order to create more interest.&lt;/font&gt;&lt;a name="_GoBack" title="_GoBack"&gt;&lt;/a&gt;&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="margin:0in 0in 10pt;"&gt;&lt;span style="line-height:115%;font-size:12pt;"&gt;&lt;font face="Calibri"&gt;On October 28&lt;sup&gt;th&lt;/sup&gt; an isolated incident resulting in an exchange of gunfire erupted in Cabo San Lucas.&lt;span&gt;&amp;nbsp; &lt;/span&gt;Much has been reported regarding this incident but I feel that it is important to set the record straight and tell the world what really happened in this sleepy tranquil place that many foreigners as well as Mexicans call home.&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="margin:0in 0in 10pt;"&gt;&lt;span style="line-height:115%;font-size:12pt;"&gt;&lt;font face="Calibri"&gt;The shootout was in retaliation for the excellent work the military and police have done in Cabo San Lucas.&lt;span&gt;&amp;nbsp; &lt;/span&gt;Recent events have caused the authorities to arrest approximately a dozen people who were in Cabo to try to advance the work of the drug cartels of Mexico.&lt;span&gt;&amp;nbsp; &lt;/span&gt;The cartels did not like the fact that the military and police are doing their job and tried to retaliate the night of October 28&lt;sup&gt;th&lt;/sup&gt; and with a brief skirmish on the 29&lt;sup&gt;th&lt;/sup&gt; when they were running from the authorities and tried to take refuge in Plaza Sendero, a popular shopping mall.&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="margin:0in 0in 10pt;"&gt;&lt;span style="line-height:115%;font-size:12pt;"&gt;&lt;font face="Calibri"&gt;Some reports that have circulated the internet report that some 200 people were held hostage by the narcs at Plaza Sendero.&lt;span&gt;&amp;nbsp; &lt;/span&gt;The truth is that shooting erupted inside of Soriana, the anchor store of Plaza Sendero.&lt;span&gt;&amp;nbsp; &lt;/span&gt;Customers inside of the store were hastily ushered into the warehouse to safety by store personal as well as the authorities.&lt;span&gt;&amp;nbsp; &lt;/span&gt;There were no injuries.&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="margin:0in 0in 10pt;"&gt;&lt;span style="line-height:115%;font-size:12pt;"&gt;&lt;font face="Calibri"&gt;All of the above took place in a period of a little over 12 hours.&lt;span&gt;&amp;nbsp; &lt;/span&gt;Everything is back to normal in Cabo.&lt;span&gt;&amp;nbsp; &lt;/span&gt;The shopping mall is operating at 100%; the authorities have determined that no drug operations will be allowed to stand in Los Cabos.&lt;span&gt;&amp;nbsp; &lt;/span&gt;This is not a good place geographically for bad guys to try to operate.&lt;span&gt;&amp;nbsp; &lt;/span&gt;There are only two roads out of Cabo both joining before they reach La Paz.&lt;span&gt;&amp;nbsp; &lt;/span&gt;One phone call will shut down both airports and the bus stations.&lt;span&gt;&amp;nbsp; &lt;/span&gt;So unless the bad guy is a good swimmer, chances are he will be caught rapidly.&lt;span&gt;&amp;nbsp; &lt;/span&gt;As an example, the recent arrests mentioned above were made within10 or 12 hours after the event.&lt;span&gt;&amp;nbsp; &lt;/span&gt;Excellent work by the authorities here.&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="margin:0in 0in 10pt;"&gt;&lt;span style="line-height:115%;font-size:12pt;"&gt;&lt;font face="Calibri"&gt;We are not concerned that the recent isolated incident will have any bearing on the safety of ourselves and our families.&lt;span&gt;&amp;nbsp; &lt;/span&gt;I, myself, have two children (2 years and 3 months old).&lt;span&gt;&amp;nbsp; &lt;/span&gt;So before you panic and think you will not come to Cabo because of the &amp;ldquo;crime&amp;rdquo;, check out this site&lt;span&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp; Some people feel the summer is a bit too warm. People who live in the desert US southwest consider the weather a bit cool. Those from the US northwest or mountain states will consider it hot. The answer to that is that the rainy season occurs during the summer months, generally July through October when the tropical fronts are sliding by following the warm water. So far this summer, we have seen very little rain. Normally, there are a few storms during this so called rainy season. However, tropical storms and hurricanes hardly ever hit Cabo directly since they do follow the warm water surrounding the tip of the Baja. There can be rain when a storm passes by, but it never lasts for very long. The climate is arid with over 300 days of sunshine (some weather reports say it is over 350 days). Average annual rainfall is 10 inches (25.4 cm.) most of which occurs during the months of September and October. The average high temperatures range from the mid-70s in winter months to mid-90s in summer months. Spring and Fall high temperatures are in the mid-80s The Pacific Ocean side of Los Cabos is generally 10 degrees cooler than the Sea of Cortez side. Truth is that Thomas Cavendish sacked the &amp;quot;invincible&amp;quot; galleon Santa Ana off Cape San Lucas in 1587.&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="margin:0in 0in 10pt;"&gt;&lt;span style="line-height:115%;font-size:14pt;"&gt;&lt;font face="Calibri"&gt;Twenty miles northeast of the rocky headland at Cabo San Lucas, sheltered from the northwest wind at Aguada Segura, two British ships lay in wait. Their prey: Manila galleons returning from the Philippines bloated to the gunwales with gold, Persian rugs, silks, jewelry, barrels of wine. Bales and bundles of cargo left no room for artillery on the ships&amp;rsquo; double decks. Plus, by the time they reached the eastern Pacific Coast &amp;mdash; often six months after leaving Manila &amp;mdash; most of the half-starved passengers had scurvy. Many died. In effect, a Manila galleon was a 700-plus-ton sitting duck.&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="margin:0in 0in 10pt;"&gt;&lt;span style="line-height:115%;font-size:14pt;"&gt;&lt;font face="Calibri"&gt;Thomas Cavendish, general of the British ships at Aguada Segura (today&amp;rsquo;s San Jos&amp;eacute; del Cabo) liked his odds. Joris van Spilbergen was the most famous of the group. &lt;span&gt;&amp;nbsp;&lt;/span&gt;&lt;/span&gt;&lt;span style="line-height:115%;font-size:14pt;"&gt;Although he was originally thought just to be an explorer for the Dutch, he would sail up and down the coast line raiding every ship that went by.&lt;span&gt;&amp;nbsp; &lt;/span&gt;&lt;/span&gt;&lt;span style="line-height:115%;font-size:14pt;"&gt;So when these pirates were not plying their trade they moored in Cabo San Lucas, San Jose del Cabo and La Paz. &lt;/span&gt;&lt;span style="line-height:115%;font-size:14pt;"&gt;. The Spanish were obviously not very happy about what was going on with their ships, so they had Jesuit group head to what they called California, and asked them to try and convert these people to Christians. They figured that if the Jesuits could convert everyone this would calm down all the pirates. The Spanish thought for sure this would work. Unfortunately it didn&amp;#39;t, the Indians were not happy, the pirates were still doing their thing and nothing had changed. Although the west end of Cabo San Lucas Bay abounds with rock formations, none can match the grandeur of El Arco. Known in English as The Arch, El Arco is located at Land&amp;#39;s End in Cabo, and this spectacular landmark is one of the symbols of the area. It is often pictured on postcards and souvenirs that depict the awe-inspiring natural aspects of the Baja Peninsula. El Arco Cabo San Lucas is a 200-foot granite rock situated at the tip of the Land&amp;#39;s End peninsula. A geographical landmark, El Arco attracts hundreds of tourists who come and marvel at its spectacular natural shape, which was carved by the strong ocean currents. centuries ago, The Arch was used as a hiding place by pirates (more about the pirates in a future post), who would ambush and plunder merchant ships heading toward the west coast. Today, this unique landmark attracts numerous cruises and mini boats filled with tourists looking for photo opportunities. If you take a water taxi from the Cabo San Lucas harbor and reach Land&amp;#39;s End in Cabo, you will see an array towering rock formations, including the arch. The series, which reaches Alaska&amp;#39;s Aleutian Islands, is known by the locals as the Finisterra. El Arco Cabo San Lucas is distinct from other rock formations, however, because of its unique arch shape. There are several formations worth seeing between The Arch and Playa del Amor, a popular honeymoon destination, including two huge rock islets. Known popularly as Los Frailes (The Friars), these rock islets look like hooded monks and are known to be a favorite hub of sea lions. Other rock formations near Land&amp;#39;s End in Cabo include Roca Pelicanos (Pelican Rock), a smaller rocky outcrop located off the northeast side of the cape. The base of this rocky outcrop is home to a rich array of marine life, including gorgonians (sea fans), sea urchins, beautiful coral formations, and colorful tropical fish. The fact that El Arco is easily accessible makes it a perfect spot for adventurers and backpackers. You can take a water taxi from the city&amp;rsquo;s harbor or hire small Mexican boats called pangas to reach El Arco Cabo San Lucas. These mini boats can be rented at Playa el Medano, the main beach of Cabo, or from the Cabo San Lucas Marina. You may also access El Arco via the Playa del Amor (Lovers Beach). During low tide, an additional part of Lovers Beach becomes visible, allowing travelers to reach the arch by foot. According to the locals at Lovers Beach, the ocean waters reach their lowest point once every four years, providing extra-close access to El Arco. The Pacific side of Lovers Beach is not a safe destination for snorkeling or diving, so tourists cannot access the arch via the water from this area. Then Hidalgo rang the church bell as he customarily did to call the Indians to mass. Hidalgo told the Mexicans who were the members of New Spain&amp;#39;s lowest caste. He urged the exploited and embittered Mexicans to recover the lands that were stolen from their forefathers. Calif.&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="margin:0in 0in 10pt;"&gt;&lt;span style="line-height:115%;font-family:Cambria;color:black;font-size:16pt;"&gt;&amp;nbsp;&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="margin:0in 0in 10pt;"&gt;&lt;span style="line-height:115%;font-family:Cambria;color:black;font-size:16pt;"&gt;It seems, to the casual observer, to be just an anonymous old, abandoned building, lost amid the glitter and ongoing drama of the thriving and popular tourist destination of Cabo San Lucas. But what very few visitors today realize is that as recently as 1962 this building and a few shacks scattered around it constituted the entire settlement of Cabo San Lucas, which at that time had a total population of only 300 cannery workers and their families.&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="margin:0in 0in 10pt;"&gt;&lt;span style="line-height:115%;font-family:Cambria;color:black;font-size:16pt;"&gt;&amp;nbsp;&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="margin:0in 0in 10pt;"&gt;&lt;span style="line-height:115%;font-family:Cambria;color:#333333;font-size:16pt;"&gt;The abundance of tuna in Cabo was discovered in the early 20th Century, and in 1917 (research differs on the year, some say 1917 and others 1927) an American tuna cannery was moved from San Diego to Cabo San Lucas to take advantage of this new resource.&lt;span&gt;&amp;nbsp; &lt;/span&gt;At its peak was the largest in Latin America, producing about 75% of Mexico&amp;rsquo;s output of canned seafood products.&lt;span&gt;&amp;nbsp; &lt;/span&gt;It was preceded in Cabo San Lucas by a tall, four-masted sailing cannery ship anchored near the arches&amp;mdash;where the cruise ships anchor today.&lt;span&gt;&amp;nbsp; &lt;/span&gt;That ship was kept supplied with tuna by a fleet of rowed skiffs and small jig boats.&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="margin:0in 0in 10pt;"&gt;&lt;span style="line-height:115%;font-family:Cambria;color:#333333;font-size:16pt;"&gt;This brought a new population that continued to grow even as the native population dwindled. By the 1930s, a small fishing village had developed to supply the cannery. The harbor was then occupied by about 400 people, all of whom were involved in the canning industry. This remained the driving force of the local economy until 1941, when a hurricane destroyed a large part of the factory. The damage was devastating and Cabo San Lucas was all but abandoned during World War II, when Japanese submarines patrolled the coast.&lt;/span&gt;&lt;span style="line-height:115%;font-size:12pt;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="line-height:115%;font-size:16pt;"&gt;&lt;font face="Calibri"&gt;In the late 1950s, a decision critical to the future of Baja California was made by the federal government in Mexico City: Cabo San Lucas would cease to be a cannery town, and would be developed instead as a major tourist destination based on sport fishing. The stream here is Mexico . &lt;br /&gt;You would have to be living on another planet to avoid hearing how dangerous Mexico has become, and, yes, it&amp;rsquo;s true drug wars have escalated violence in Mexico , causing collateral damage, a phrase I hate. Collateral damage is a cheap way of saying that innocent people, have been robbed, hurt or killed. &lt;br /&gt;But that&amp;rsquo;s not the whole story. Neither is this. This is my story... &lt;br /&gt;I&amp;rsquo;m a journalist who lives in New York City , but has spent considerable time in Mexico , specifically Puerto Vallarta , for the last four years. I&amp;rsquo;m in Vallarta now. And despite what I&amp;rsquo;m getting from the U.S. media, the 24-hour news networks in particular, I feel as safe here as I do at home in New York , possibly safer. I walk the streets of my Vallarta neighborhood alone day or night. And I don&amp;rsquo;t live in a gated community, or any other All-Gringo neighborhood. I live in Mexico . Among Mexicans. I go where I want (which does not happen to include bars where prostitution and drugs are the basic products), and take no more precautions than I would at home in New York; which is to say I don&amp;rsquo;t wave money around, I don&amp;rsquo;t act the Ugly American, I do keep my eyes open, I&amp;rsquo;m aware of my surroundings, and I try not to behave like a fool. &lt;br /&gt;I&amp;rsquo;ve not always been successful at that last one. One evening a friend left the house I was renting in Vallarta at that time, and, unbeknownst to me, did not slam the automatically-locking door on her way out. Sure enough, less than an hour later a stranger did come into my house. A burglar? Robber? Kidnapper? Killer? Drug lord? &lt;br /&gt;No, it was a local police officer, the &amp;ldquo;beat cop&amp;rdquo; for our neighborhood, who, on seeing my unlatched door, entered to make sure everything (including me) was okay. He insisted on walking with me around the house, opening closets, looking behind doors and, yes, even under beds, to be certain no one else had wandered in, and that nothing was missing. He was polite, smart and kind, but before he left, he lectured me on having not checked to see that my friend had locked the door behind her. In other words, he told me to use my common sense. &lt;br /&gt;Do bad things happen here? Of course they do. Bad things happen everywhere, but the murder rate here is much lower than, say, New Orleans, and if there are bars on many of the ground floor windows of houses here, well, the same is true where I live, in Greenwich Village, which is considered a swell neighborhood &amp;mdash; house prices start at about $4 million (including the bars on the ground floor windows). &lt;br /&gt;There are good reasons thousands of people from the United States are moving to Mexico every month, and it&amp;rsquo;s not just the lower cost of living, a hefty tax break and less snow to shovel. Mexico is a beautiful country, a special place. The climate varies, but is plentifully mild, the culture is ancient and revered, the young are loved unconditionally, the old are respected. &lt;br /&gt;And then there are the people. Generalization is risky, but&amp;mdash; in general &amp;mdash; Mexicans are warm, friendly, generous and welcoming. If you smile at them, they smile back. If you greet a passing stranger on the street, they greet you back. If you try to speak even a little Spanish, they tend to treat you as though you were fluent. Or at least not an idiot. I have had taxi drivers track me down after leaving my wallet or cell phone in their cab. I have had someone run out of a store to catch me because I have overpaid by twenty cents. I have been introduced to and come to love a people who celebrate a day dedicated to the dead as a recognition of the cycles of birth and death and birth &amp;mdash; and the 15th birthday of a girl, an important rite in becoming a woman &amp;mdash; with the same joy. &lt;br /&gt;Too much of the noise you&amp;rsquo;re hearing about how dangerous it is to come to Mexico is just that &amp;mdash; noise. But the media love noise, and too many journalists currently making it don&amp;rsquo;t live here. Some have never even been here. They just like to be photographed at night, standing near a spotlighted border crossing, pointing across the line to some imaginary country from hell. It looks good on TV. &lt;br /&gt;Another thing. The U.S. media tend to lump all of Mexico into one big bad bowl. The recent rise in violence in Mexico has mostly occurred in a few states, and especially along the border. It is real, but it does not describe an entire country. &lt;br /&gt;It would be nice if we could put what&amp;rsquo;s going on in Mexico in perspective, geographically and emotionally. It would be nice if we could remember that, as has been noted more than once, these drug wars wouldn&amp;rsquo;t be going on if people in the United States didn&amp;rsquo;t want the drugs, or if other people in the United States weren&amp;rsquo;t selling Mexican drug lords the guns. Most of all, it would be nice if more people in the United States actually came to this part of America ( Mexico is also America , you will recall) to see for themselves what a fine place Mexico really is, and how good a vacation (or a life) here can be. &lt;br /&gt;So come on down and get to know your southern neighbors. I think you&amp;rsquo;ll like it here. a great place to stock a traditional Mexican kitchen!&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;CHEDRAUI&lt;/font&gt;&lt;/span&gt;&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;Chedraui was founded in 1927 by a Xalapa, Veracruz couple, opening their first supermarket in Xalapa in 1971.&lt;span&gt;&amp;nbsp; &lt;/span&gt;It is now Mexico&amp;#39;s fourth-largest retailer with about 90 self-service Chedraui stores operating in competition with major grocers and hypermarkets like Soriana and Walmart.&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;In 2010, when they bought out the time-honored Centro Comercial Californiana (CCC) which had performed so long and so faithfully, we were all skeptical that Chedraui could ever take its place in our hearts and shopping carts.&lt;span&gt;&amp;nbsp; &lt;/span&gt;However, after a major overhaul which included super-cool basement parking with electric ramps which magically grab your cart. &lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;Chedraui is very traditional, but continues to stock many of the American products which are still in great demand.&lt;span&gt;&amp;nbsp; &lt;/span&gt;The impressive cheese department, continually stocks all the essentials plus special items like artesanal cheeses from Chiapas.&lt;span&gt;&amp;nbsp; &lt;/span&gt;Like Soriana, they keep a nice bulk department with seeds, nuts and dried fruits as well as marmalades and mole pastes.&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;Fruits and vegetables run to the traditional Mexican, including popular items like jicama, chayote, platano macho (plantain)&amp;hellip; and of course a full-time nopalero, the man who does nothing but stand and clean perfect, fresh cactus paddles for consumption in soups, salads and salsas!&lt;span&gt;&amp;nbsp; &lt;/span&gt;Very recently, all the big stores have begun to stock traditional herbs like epazote, an essential for southern Mexicans cooking far from home.&lt;span&gt;&amp;nbsp; &lt;/span&gt;&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;Chedraui has the best selection of dried chiles, several of which can be found in bulk, along with jamaica and Mexico&amp;rsquo;s fabled cone-shaped brown sugar, piloncillo, among other wonders.&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="margin:0in 0in 0pt;"&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;EL MEXICANO&lt;/font&gt;&lt;/span&gt;&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;Artesanal Tortilleria&lt;/font&gt;&lt;/span&gt;&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;It became apparent that we had truly joined the Mexican Republic the first time we set foot in El Mexicano, a true artesanal tortillera producing fresh nixtamal masa daily.&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;There&amp;rsquo;s even a verb for it.&lt;span&gt;&amp;nbsp; &lt;/span&gt;Nixtamalization refers to the process of soaking and cooking hard starchy field corn in a solution of alkaline lime, after which it can be hulled.&lt;span&gt;&amp;nbsp; &lt;/span&gt;Corn which has been nixtamalized has several benefits over unprocessed grain.&lt;span&gt;&amp;nbsp; &lt;/span&gt;Its nutritional value is significantly increased, as is its flavor and fresh corn aroma, and it is much easier to grind.&lt;span&gt;&amp;nbsp; &lt;/span&gt;&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;The four women who work seven days a week at El Mexicano, grinding fresh hot nixtamal into the finest corn masa for making tortillas, antojitos de masa and tamales, are my true heroes.&lt;span&gt;&amp;nbsp; &lt;/span&gt;It&amp;rsquo;s the difference between Wonder bread and homemade whole grain bread.&lt;span&gt;&amp;nbsp; &lt;/span&gt;&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:Calibri;"&gt;&lt;font size="3"&gt;Throughout Mexico women like these work tirelessly on the streets and in small hole-in-the-wall eateries, feeding a nation for almost no money &amp;ndash; and what food!&lt;span&gt;&amp;nbsp; &lt;/span&gt;Eat even a simple tortilla sprinkled with salt from El Mexicano, and you feel satisfied, well fed, as if you had gone home to eat mom&amp;rsquo;s cooking for lunch! &lt;/font&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;font size="3"&gt;&lt;span style="font-family:Calibri;"&gt;It is a privilege to have a quality traditional tortilleria like this in our community.&lt;span&gt;&amp;nbsp; is made from clotted cream similar to Devonshire cream.&lt;span&gt;&amp;nbsp; &lt;/span&gt;It is traditionally served at fiestas like Texcoco&amp;rsquo;s Horse Fair during the first days of March, and the Cotton Fair of San Luis Potosi.&lt;span&gt;&amp;nbsp; &lt;/span&gt;It is artisanal bread from the state of Tlaxcala, Mexico&amp;rsquo;s tiniest state that nestles into a comfortable border with Puebla, also renowned for its gastronomy.&lt;span&gt;&amp;nbsp;
